Okay so, no I didn't have a week-long migraine (though it felt like that), I have just
been really really busy. My dissertation is due in less than three weeks and I am totally not finished. Or even close. Is this normal? Sometimes I feel like the time-pressue is good and that it'll get the best out of me. But I don't understand - I have been working consistently (well, apart from Slovenia). Am I really just that slow of a writer?

You'll never feel like you're nearly done probably. This is your baby, you've been researching it for months. So there will never be enough room or time for all the different angles and visions you might have for the piece.
Still, i think you should be really proud. Even if you are the slowest writer in the world (which i doubt, you're not carving the bloody thing into tablets, after all)I think your finished project is only going to benefit from the slow and steady consideration you've given it.
By writing bits at a time, you're more likely to be thoughtful about your views. So you might have less words than someone else, but the words you have are carefully chosen, researched, and arranged to say what you really think needs to be said.
